Your beginning claim is true in each case. ...I cannot prove psychics don't exist. There are things that happen that cannot be explained, due to unknowns that cannot, yet, be discovered. And, indeed I believe it, you did not attempt to murder me this time.

It's your conclusion that lacks sound reasoning. The first, the problem of the Devil's Proof: I do not have the burden of proof. The second, a false dichotomy and an appeal to ignorance: there is insufficient investigation to fully comprehend the unexplained. The third, the problem of induction: just because you did not do it this time does not mean you will never.
